A variation on a Southern favorite.





List of Ingredients



• 2 C. Corn Meal, self rising
  
• 1 C. flour, self rising
  
• 1/2 tsp. sea salt
  
• 3 T. sugar
  
• 2 tsp. baking powder if the corn meal isn't self rising
  
• 3 eggs, lightly beated
  
• 1/2 C. milk
  
• 1 1/2 C. cheddar cheese, shredded
  
• 2 jalapenoes, seeded and chopped small
  
• 1 C. creamed corn
  
• 1 lrg. onionc chopped
  
• 1/2 C. =/- ham, chopped, optional
  
• vegetable oil for frying
  






Instructions



1. Mix all dry ingredients together. Stir in milk and egg just until moistened. Gently stir in remaining ingredients and fry by spoonfuls until golden brown. Sprinkle with sea salt while draining on a paper towel.
