    • vegetable oil for frying
    • corn tortillas
    • eggs
    • milk
    • sea salt/pepper


    Instructions


    1. Cut corn tortillas into bite sized pieces. Fry until crisp in a small amount of vegetable oil. In a bowl whisk together eggs, milk and a wee bit of salt and pepper. Pour onto tortillas and scramble until cooked through.


    Final Comments


    My favorite Migas are the ones with chopped onion and bell pepper. They are very good with taco sauce. And equally delicious with chopped ham or cooked bacon bits. You can add anything you want. Just add your additional ingredients to your egg scramble and pour onto the cooked tortillas. Finish cooking and if you want sprinkle with grated cheese.
