    List of Ingredients


    • 1 small bag or 1/2 a large bag frozen hash browned potatoes
    • 1/2 large white onion, grated
    • 1 green bell pepper, chopped fine
    • 1 large carrot, grated
    • 3 large eggs
    • grated Colby-jack cheese
    • oil and butter
    • sea salt and pepper


    Instructions


    1. Thaw potatoes with warm water, squeeze dry. Put some oil and butter to melt in a pan. Fry all ingredients except the egg and cheese. When mixture has browned all over add the eggs and fry a bit, taste and season, put into a oven proof baking dish and top with grated cheese. Bake at 350 degrees F. until potatoes are done.
