    Cashew Butter Cookies

    List of Ingredients


    • 1 1/2 C. All purpose flour
    • 1 tsp. Baking soda
    • 1/2 tsp. Sea salt
    • 1/2 C. Unsalted butter, softened
    • 1 C. Brown sugar, packed
    • 1 tsp. Vanilla
    • 1 tsp. Vanilla paste
    • 1 lrg. Egg
    • 3/4 C. Cashew butter
    • Powdered sugar
    • Granulated sugar


    Instructions


    1. Mix together and set aside, flour, baking soda, baking powder and salt.
    2. Cream together until fluffy, butter, brown sugar, vanilla and vanilla paste. Scrape down sides and add egg and cashew butter. Mix well.
    3. Add flour mixture on low just until blended being careful not to overmix.
    4. Place powdered sugar in a bowl and granulated sugar in another. Using cookie scoop or tablespoon, make balls. Roll balls in granulated sugar and then in the powdered sugar. Bake on a parchment lined cookie sheet for about 16 minutes. Cool on sheet for 3-5 minutes before transferring to a wire rack to finish cooling.


    Final Comments


    If you don't have the vanilla paste don't worry about it.
