Cashew Butter Cookies

List of Ingredients
- 1 1/2 C. All purpose flour
- 1 tsp. Baking soda
- 1/2 tsp. Sea salt
- 1/2 C. Unsalted butter, softened
- 1 C. Brown sugar, packed
- 1 tsp. Vanilla
- 1 tsp. Vanilla paste
- 1 lrg. Egg
- 3/4 C. Cashew butter
- Powdered sugar
- Granulated sugar
Instructions
- Mix together and set aside, flour, baking soda, baking powder and salt.
- Cream together until fluffy, butter, brown sugar, vanilla and vanilla paste. Scrape down sides and add egg and cashew butter. Mix well.
- Add flour mixture on low just until blended being careful not to overmix.
- Place powdered sugar in a bowl and granulated sugar in another. Using cookie scoop or tablespoon, make balls. Roll balls in granulated sugar and then in the powdered sugar. Bake on a parchment lined cookie sheet for about 16 minutes. Cool on sheet for 3-5 minutes before transferring to a wire rack to finish cooling.
Final Comments
If you don't have the vanilla paste don't worry about it.
