    List of Ingredients


    • 3/4 C. shortening
    • 2 C. brown sugar
    • 2 jumbo eggs
    • 1 can pumpkin pie filling
    • 2 tsp. pure vanilla, extract
    • 1 tsp. orange extract
    • 2 C. unbleached flour, all-purpose
    • 1 C. oatmeal
    • 2 1/2 tsp. baking powder
    • 1 C. dates, chopped
    • 1/4 C. flour
    • 1 C. pecans, chopped


    Instructions


    1. Cream together shortening and brown sugar. Beat in eggs one at a time, add pumpkin pie filling and extracts. Sift together 2 cups flour and baking powder. Add flour and oatmeal into creamed mixture. Stir together dates and pecans and add to batter. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 degrees F. for about 16 minutes.
