Pineapple Cookies

List of Ingredients
- 1 C. light brown sugar
- 1 C. superfine sugar
- 1 C. Crisco
- 2 jumbo eggs
- 20 oz. can crushed pineapple, well drained
- 1 1/2 tsp. pure vanilla
- 1/2 C. chopped pecans
- 4 C. unbleached flour
- 1/2 tsp. sea salt
- 1 1/2 tsp. baking soda
- 1/2 tsp. baking powder
Instructions
- Preheat oven to 350 degrees F. Combine flour, salt, baking soda and baking powder. In a separate bowl mix together vanilla, nuts and pineapple and set aside.
- Using an electric mixer cream Crisco, both sugars and eggs until light and fluffy. Stir, gradually and by hand, the dry and pineapple mixtures.
- Drop by spoonfuls onto a parchment lined cookie sheet. Bake for 12-15 minutes. Don't stack theses cookies as they will stick together.
