    Lughnasadh-Corn Fritters

    List of Ingredients

    • 2 eggs, beaten
    • 2 1/2 C. all purp flour
    • 2 tsp. baking powder
    • 1 tsp. sea salt
    • 3/4 C. milk
    • 2 T. butter, unsalted, melted
    • 1 can creamed corn
    • oil for frying
    • maple syrup for dressing, opt.


    1. Mix all together and drop by small spoonfuls into heated frying oil. fry 2-3 minutes per side until golden brown. Drain on paper towels. Serve hot and drizzled with maple syrup or powdered sugar or both.
