    Samhain-Meal in a Pumpkin

    List of Ingredients

    • 4-5 lb. sugar pumpkin
    • 1 tsp. sea salt
    • 1 1/2 lbs lean ground beef
    • assorted seasonings-cumin, pepper, garlic, onion powder...
    • 3/4 C. bell pepper, chopped
    • 1/2 tsp. pepper
    • 1/3 C. celery, chopped
    • 1 C. onion, chopped
    • 1 can cream of chicken soup
    • 2 C. rice, cooked


    1. Cut a lid in the pumpkin. Scoop out the seeds (save for roasting) and excess membranes.

    2. In a skillet combine ground beef, seasonings, green peppers, celery and onion. Really season the meat as this is where your whole dish will get it's flavor. Brown and drain. Add cream of chicken soup then rice and mix well. Fill the pumpkin and replace pumpkin lid.

    3. Wrap foil around the pumpkin but not really covering it, wrap it loose and place on a cookie sheet. Bake at 350 degrees F. for 1 1/2 hours then bake for 45-60 minutes longer at 400 degrees. To check the pumpkin for doneness remove lid and fork the inside pumpkin meat. It is done when it feels like a done baked potato.

    4. To serve scoop out part of the baked pumpkin along with the meat mixture.
