Squaw Corn Casserole

List of Ingredients
1 can cream style corn
1 can whole kernel corn
2 eggs beaten
3/4 cup cornmeal
1/4 cup cooking oil
1 small onion, chopped
1 can diced green chilies, including juice
1 small jar diced pimento, drained
1/2 lb. grated cheddar cheeseRecipe
Mix all ingredients together. Place in casserole dish. Top with additional grated cheese and 1 stick (1/4 lb.) margarine (optional). Bake 1 hour at 400 degrees. No definite quantity of crackers and cheese on top - use your judgment. This makes a very large casserole. You may want to make 2 smaller casseroles, one for now, one to freeze. Freeze only about 1 month. (Chilies and pimento flavors will get stronger.) Thaw in refrigerator before baking
