Awesome Meatloaf

1 cup of coarsely chopped mushrooms
1 small onion finely chopped
30g butter
3/4 cup fresh bread crumbs
3 tbs chopped fresh parsley
2 tsp worstershire sauce
salt and pepper to taste
2 lb lean ground beef
5 tbs ketchup
2 eggs - beatenRecipe
Here's what ya gotta do:
Preheat oven to 375
Saute onions and mushrooms in the butter until they are soft. Put the mixture into a bowl.
Add in the breadcrumbs, spices and the worstershire to the bowl and mix thoroghly.
Mix beef, eggs and ketchup in another bowl.
Get a loaf tin and pack the bottom with half of the meat mixture. Make sure it has a nice even top. Add the mushroom mixture to the tin and pat it into a nice flat layer as well. Add the rest of the meat mixture to the tin.
Bake for an hour and a quarter. Let it rest for a few minutes and drain.
