Eyeof Round Roast With Garlic & Rosemary

1-5 lb. Eye of Round Beef Roast
1 tsp. seasoned salt
1 tsp. black pepper
1 tsp. garlic powder
1-1/2 tsp. crushed dried rosemary
2 tsp. vegetable shortning
Recipe
1. In a small bowl, mix together the salt,pepper, garlic powder, and rosemary.
Liberally rub the entire surface of the roast with the seasoning mixture. Wrap the roast tightly in aluminum foil and refrigerate over night.
Preheat oven to 300'F.
2. Melt the shortning in a large skillet and brown the roast on all sides. When browned, place the roast in a shaloow roasting pan. Insert a meat thermometer in the thickest portion. Roast approximately 2-1/2 hours until temperature reaches
135'F for medium rare or to 150'F for medium.
3. Allow the roast to sit for approximately 15 minutes to reach the final temperature of 145'F for medium rare or 160'F for medium.
4.Slice thinly and place on a plater for buffet parties, or slice a little thicker for dinner parties.
