List of Ingredients
1 teaspoon olive oil, extra virgin
1 garlic cloves
1/4 onions, red, whole
4 ounce chicken breast, boneless/skinless, raw
1 bell pepper, red, whole
1/4 broccoli, frozen, 10-oz. pkg.
1 tortilla, 10" flour (230 cals. each)
1 tablespoon sour cream, low-fat
1 tablespoon salsa, jarred or fresh
8 ounce milk, non-fat skim
Recipe
Measure oil into nonstick skillet and heat over low heat. Peel and chop garlic; add to pan. Chop onion finely; add to pan.
Slice chicken and add to pan. Add salt and pepper to taste. Increase heat to medium, and saute 4 minutes. While chicken and onions cook, clean and slice red pepper into strips.
Add broccoli and red peppers to pan; saute all 3 minutes, just so veggies are warmed through but still brilliant in color.
Load up your whole wheat tortilla with entire contents of pan, add measured amount of light sour cream. Top with your favorite salsa; roll and eat. Don't be surprised if you have extra meat and veggies on the side!
Serve 8 ounces skim milk or 4 ounces low fat or non fat yogurt with this meal.
