    A FAVORITE AT MY HOUSE AS A COMPANY MEAL OR JUST WHEN WE FEEL LIKE TREATING OURSELVES.

    List of Ingredients





    2 eggs slightly beaten
    3 whole chicken breasts (split, skinned and boned)
    1 cup seasoned bread crumbs
    3 tbsp olive oil
    6 slices mozzarella cheese
    1 pint heavy cream
    1 cup grated parmesan cheese
    salt and pepper to taste

    PRE-HEAT OVEN TO 350 DEGREES. PLACE BREAD CRUMBS IN SHALLOW BOWL. DIP CHICKEN BREASTS INTO THE EGG, THEN COAT THEM WITH BREAD CRUMBS. IN LARGE SKILLET HEAT THE OIL UNTIL MODERATELY HOT. PLACE CHICKEN IN OIL AND BROWN LIGHTLY ON BOTH SIDES. PLACE BROWNED CHICKEN INTO HEAVY BAKING DISH. (A 9x13 CAKE PAN WORKS FINE) TOP EACH BREAST WITH ONE SLICE OF MOZZARELLA CHEESE. IN A SAUCEPAN, MIX TOGETHER THE HEAVY CREAM, PARMESAN CHEESE PARSLEY AND SALT AND PEPPER. COOK UNTIL MIXTURE IS HOT AND HAS THICKENED. POUR OVER CHICKEN AND BAKE FOR 25 MINUTES OR UNTIL CHEESE IS MELTED AND LIGHTLY GOLDED. (I COOKED THIS FOR 40 MINUTES TO BE SURE WITH CHICKEN!)
    **NOTE: I SERVE THIS OVER FETTUCCINI NOODLES.
