I fix this frequently when we have company for dinner and it always gets raves.
List of Ingredients
4 Cornish game hens (can be split in half or left whole)
6 cloves elephant garlic, peeled and halved
3 tbsp margarine or butter, melted
¨ö tsp salt
¨ù tsp pepper¨÷
1/3 cup sliced shallots
2 tbsp margarine or butter
1 cup cherry preserves
¨ù cup red wine vinegar
¨ö tsp ground allspice
¨ù tsp ground cloves
Recipe
Preheat oven to 425 degrees. Rub skin of each hen with cut side of garlic cloves; reserve garlic. (If using whole chickens, tie drumsticks to tail) Brush hens with the 1 tbsp melted margarine, sprinkle with salt and pepper. Place hens in shallow roasting pan. (If using whole chickens, twist wingtips under back of each hen) Place halved garlic cloves around hens. Roast for 40 to 45 minutes.
Meanwhile, in saucepan cook shallots in the 2 tablespoons margarine over medium heat for 3 minutes or until tender, stirring often. Stir in preserves, vinegar, allspice, and cloves. Bring to boiling; reduce heat. Boil gently, uncovered, 20 minutes or until desired glazing consistency.
Remove one of the pieces of garlic from pan, cool slightly, finely chop and stir into glaze. Arrange hens and garlic on serving platter and spoon glaze atop. Serves 4 or 8
