Recipe Introduction
I hope I haven't stolen this recipe from someone or somewhere and don't remember. I made it up on the fly on Sunday when we had unexpected guests for dinner and it was so easy I had to share it! Please let me know if I have unknowingly plagiarized it - don't want to stir up trouble!
NOTE: Be careful not to overpower the nutty flavor of the wild rice by using too much red pepper. You just want to "kick it up a notch!" (Now that one I did steal ! : -)
I served this with ceasar salad, homemade bread and a hearty burgundy. Enjoy!
List of Ingredients
10 chicken legs and thighs
1 can Campbell's Golden Mushroom soup
1 can Campbell's French Onion soup
1 can water (see directions below)
2 boxes Uncle Ben's Long Grain and Wild Rice
ground red pepper (or paprika) to taste
Recipe
1.) Rinse chicken parts and pat dry.
2.) In deep, large casserole dish, mix together both cans of soup. Add water to mushroom soup can and add to casserole dish.
3.) Mix in both boxes of rice and seasonings and add red pepper (or paprika) to your taste.
4.) Add chicken parts, pushing them down to the bottom of the dish and covering with soup/rice mixture. Bake approximately 1 hour at 375 degrees F.
