1 4-lb chicken
8 cups water
2 tbsp salt
2 bay leaves
1 medium onion, peeled and thinly sliced
1 celery heart with leaves, sliced
2 carrots, peeled and sliced
1 large anaheim chili, seeded and sliced
1/2 cup long-grain riceRecipe
In a soup pot over high heat, bring the chicken, water, walt and bay leaves to a boil. Reduce heat to low, cover and simmer 45 minutes.
Remove chicken from the pot and gently break the chicken into 3 or 4 pieces and allow to cool.
Meanwhile, put the onion, celery, carrots, chili pepper and rice into the broth in which the chicken was cooked. When the chicken is cool enough to handle, pull off all the meat and put it in the pot with the broth and vegatables. Simmer the soup gently for 30 to 45 minutes, or until the rice is very tender.
Serve hot with warm tortillas.
