    Grilled Stuffed Meat Loaf

    List of Ingredients

    1 ½ lbs. ground beef
    1 egg
    Diced onion to taste (I just used a little ~ maybe 2-3 Tbsp.)
    2 slices of bread (soft) chopped
    2 or 3 Tbsp. (approx.) bbq. Sauce (I just dumped a little in)
    1 tsp. Worcestershire sauce
    Seasoning salt
    Pepper
    Garlic salt (or powder)
    Accent

    Stuffing:
    Onion slices
    Fresh mushrooms

    Sauce:
    ¼ C. Catsup
    2 Tbsp. Mustard
    3 Tbsp. Brown Sugar

    Recipe

    In a large bowl combine the meat loaf ingredients. Using your
    hands, mix until thoroughly combined.

    Saute Onions & Mushrooms in butter

    On a large piece of heavy-duty foil, pat beef mixture in a 12 x 8” rectangle; spoon mushroom mixture to within 1” of edges. Roll up jelly-roll style, starting with a short side & peeling foil away while rolling. Seal seam & ends. Discard foil.

    Mix sauce ingredients together.

    Using a metal spatula (you may need two), gently pick up loaf
    from the foil and place directly on the cooking grate.
    Grill the meat loaf over indirect medium-low heat (about 300° F),
    with the lid closed, until a thermometer inserted horizontally through
    the top of the loaf registers 155°F, 50 to 60 minutes. Remove the
    loaves from the grill and let rest 10 to 15 minutes (they will
    continue to cook, allowing them to reach the recommended 160°F for
    ground beef and pork). Slice the meat loaf into 1/2-inch slices and
    serve with the remaining sauce.

    *I ended up grilling this for about 1 ½ hrs. ~ putting the loaf directly on the heat towards the end. *I put the sauce on the meatloaf throughout cooking, but saving most of the sauce for the last 5 minutes. Before putting the final sauce on, I cut some slits in the meatloaf so the sauce would run down into the meat. *When I rolled mine up, I rolled it starting with a long end. *I use ALL the sauce while grilling, I don't have any remaining to serve with the meat.
