    BBQ Chicken Lasagna

    List of Ingredients

    8 oz. Lasagna Noodles
    2 Tbsp Olive Oil
    2 lb. Chicken Breast, ground
    2 Tbsp. Chili Powder
    1/2 C. Red Onion, chopped
    2 - 18 oz. bottles BBQ Sauce
    15 oz. can Black Beans, rinsed & drained
    1 1/4 C. Corn Kernels, frozen
    3/4 C. Roasted Red Bell Peppers, chopped
    3 C. Shredded Cheddar Cheese
    1/4 C. Green Onions, sliced

    Recipe

    Cook pasta according to package directions. Drain well & lay lasagna sheets on foil, so they won't stick. Preheat oven to 425º.
    In a large pan over medium high heat, add oil & cook chicken, chili powder & red onion, until meat is browned, about 5-7 minutes. (I baked my chicken in the oven sprinkled with chili powder - 15 min covered, 10 min uncovered)
    Add BBQ Sauce,(reserve a little for bottom of pan) beans, corn & roasted red bell peppers. Heat through about 3 minutes. Season with salt & black pepper.
    Assemble lasagna in a sprayed 9 x 13 casserole dish. Coat bottom of dish with BBQ Sauce, and layer with lasagna noodles, chicken mixture & cheese. Continue this for two more layers, finishing with hefty layer of cheese.
    Bake covered for 30 minutes, & then uncovered an additional 5 minutes.
    Garnish with green onions & serve hot.
    Refrigerate leftovers.
