    Asparagus Roll-ups

    Very easy, very elegant.


    List of Ingredients


    • 40 spears asparagus, cooked or canned
    • 1 large package cream cheese
    • 2 tablespoons mayonnaise
    • 2 tablespoons sour cream (or more for easy spreading)
    • 2-3 tablespoons minced chives or green onions
    • 1 red pepper, julienned into this slivers
    • 2 loaves whole wheat or white bread


    Instructions


    1. Remove crusts from bread slices. Flatten with rolling pin.
    2. Mix cream cheese, sour cream and mayonnaise together. Spread on bread slices.
    3. Place one asparagus spear and one sliver red pepper on each slice of bread. Roll up. Slice into 3/4-inch rounds.


    Final Comments


    This makes a large amount--roughly 240 pieces. Cut recipe in half for smaller servings.

    Note: Minced green onion may be added to cheese mixture.
