    Cold Curried Chicken Balls

    My adaptation. The original recipe was a cheeseball. It was good, but I like this version better.


    List of Ingredients


    • 1 cup finely chopped cooked chicken
    • 2 tablespoons chutney
    • 2 tablespoons mayonnaise
    • 1 tablespoon curry powder (or more to taste)
    • 1/2 cup pecans, chopped
    • 1 small cream cheese, softened
    • Dash salt
    • 2-3 drops Tabasco or other hot sauce
    • 1 small can French fried onion rings


    Instructions


    1. Mix first eight ingredients together (chicken through Tabasco). Chill. Shape into balls about 1 inch in diameter.
    2. Crush onion rings in food processor. Roll balls in crumbs. Chill. Spear with toothpicks.


    Final Comments


    Ground peanuts make a good alternative for the onion ring crumbs which tend to be a bit oily. Add a piece of fruit--pineapple chunks, 1/2 strawberry, banana chunk, mango sliver, etc. to the toothpick. Serve additional chutney on the side, if desired.
