    Cream Puffs

    These are really easy, but look like you've fussed all day. These are for savory fillings, but sweet ones work, too.


    List of Ingredients


    • 1 stick butter
    • 1 cup boiling water
    • 1 cup flour
    • 1/4 teaspoon salt
    • 4 eggs


    Instructions


    1. Melt oleo in boiling water. Add flour and salt all at once. Cook, stirring constantly, until mixture leaves sides of pan. Remove from heat.
    2. Add eggs, one at a time. Beat vigorously until mixture again leaves sides and pan and forms as ball.
    3. Drop by round teaspoons 2 inches apart on greased cookie sheet.
    4. Bake at 425 degrees for 15 minutes. Reduce heat to 325 and bake 25 minutes more.
    5. Cool on cookie racks. Fill with favorite filling (See Shrimp Spread this topic).


    Final Comments


    A pastry bag may be useful for filling.

    Fill close to serving time. Puffs may become soggy if filled too far in advance.
