    Garlic Cheeseball

    The cheeseballs here may be varied according to taste. I use whatever I have on hand--the one constant being garlic.


    List of Ingredients


    • 1-2 packages cream cheese (regular or low-fat)
    • Cheese: 1/4 pound blue cheese or 3/4 pound sharp cheddar*
    • Garlic: 2-6 cloves, minced
    • Mayonnaise (regular or low-fat): 2-4 tablespoons
    • Milk, as needed to moisten or wine
    • Sour cream or plain yogurt, to adjust consistency
    • Cayenne pepper (opt.)
    • Pecans, pinenuts, parsley, paprika
    • Minced onion to taste (opt.)


    Instructions


    1. Allow cheeses to come to room temperature. Shred or crumble. Mix with cream cheese and desired remaining ingredients. Roll in pecans, pinenuts, parsley, or paprika (or a combination). Chill. Serve with crostini or crackers.


    Final Comments


    *Or any other firm cheese. Velveeta works, too, either with another cheese or by itself. Monterey Jack with chiles is nice.

    These cheeseball variations make good sandwiches, cold or grilled.


    Adding sour cream or yogurt produces a softer texture. Consistency may become more of a spread than a cuttable ball. Cottage cheese will serve the same function.
