    Peanuts: Boiled

    Only in the South. Boiled peanuts are an acquired taste. I acquired it on my first sample. Others in my family remain unconvinced. Selling boiled peanuts is a common sight on well-traveled roads. The purveyors park their pickups in an accessible spot and wait for passersby to stop. The business must be fairly lucrative because the same people sell from the same spots year after year. I wonder if Uncle Sam ever gets his cut. When my buddy Murphy and I traveled back and forth to USM, we'd often stop and buy a bag. The idea is to eat the peanuts and then slurp the salty water out of the shell. Good for hypertension.


    List of Ingredients


    • Fresh green peanuts
    • Water
    • SALT


    Instructions


    1. Wash field grit off peanuts. Place in large kettle. Cover with water. Add 2 cups salt per kettle--yes, 2 cups. Bring to a boil. Boil 1-2 hours until peanuts are soft. Turn off heat. Let set until kettle cools.


    Final Comments


    This is one recipe I've not made, probably the only one. The nearest distributor is less that three miles away. Why go to the trouble when he's this close!!
