Guess I'll also place it under another category. List of Ingredients 2 1/2 cups sweet milk (you can tell this is old-timey) 1 cup stone-ground cornmeal 2 tablespoons butter 4 eggs 1/2 teaspoon baking powder 1 teaspoon salt 1 teaspoon sugar Instructions Scald milk and slowly stir in cornmeal. Continue stirring until quite thick. Remove from heat and stir in butter. Separate eggs. Whip yolks until light. Add baking powder, salt and sugar and then add all to the cornmeal mixture. Whip whites until stiff. Fold into cornmeal mixture. Bake in greased 1 1/2-quart baking dish at 375 degrees for 45 minutes. Final Comments While this may be more complicated than the spoon bread recipe from Miss Hoyt (See Mamma's Spoonbread), it is probably richer. An updated version might contain a few green chiles and a little cheese.
