    Beef 'n' Chile Stew

    The idea for this came from the internet. I combined it with my Southwestern Grits [See Grains] recipe. We thought it was very good.


    List of Ingredients


    • About 2 pounds round steak, cut into bite-sized pieces, lightly floured
    • 1 large onion, cut into 1/2" dice
    • 2 cloves garlic, minced
    • 2 tablespoons oil
    • 1 cup dry red wine
    • 1 small can tomato sauce
    • About 1/4 cup red wine vinegar
    • 2 cans chopped green chiles
    • 1 teaspoon oregano, preferably Mexican
    • 1/2 teaspoon ground cumin
    • Salt and pepper


    Instructions


    1. Brown beef cubes. Add onions and garlic. Saute until onions are translucent. Stir in dry spices and allow to cook briefly until fragrant. Add remaining ingredients. Simmer 2-3 hours.


    Final Comments


    This is also good served in tortillas.
