    Foolproof Swiss Steak

    One time when I was cooking for my sisters and their spouses, Jane made this a special request. She couldn't believe it was this easy.

    It's another Reynolds' recipe.


    List of Ingredients


    • 1 oven bag prepared according to directions with 1 tablespoon flour
    • 2 cans stewed tomatoes (I use canned diced or Italian sliced)
    • 1 tablespoon sugar
    • 1 teaspoon yellow mustard
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • (1/2 teaspoon cayenne pepper)
    • 2 pounds round steak, cut into 4-6 pieces 1/2" thick, pounded with flour to 1/4" thick


    Instructions


    1. Prepare bag. Add the tomatoes, sugar, mustard, salt and pepper to bag. Squeeze to blend.
    2. Pound steak pieces with flour to 1/4-inch thick. Add to bag. Turn to coat beef with the sauce. Arrange steak in an even layer. Close bag with tie and make 6 slits to vent.
    3. Bake at 350 degrees about an hour.
    4. Serve over rice, noodles, or mashed potatoes.


    Final Comments


    I spread several squares of waxed paper on a cutting board when I pound flour into the steak. This saves a lot of wiping when I'm finished.
