    This is my invention. I like the rich flavor that comes from the broth. It can also be done on top of the stove. Dick gave me a Corningware crockpot a few years ago and it's able to be used on the stove or in the oven. Really versatile. If I start this on a busy day, I finish it on top of the stove at night.


    List of Ingredients




    Cook 1 cut-up fryer in the crockpot with about 1/2 cup water. Cook on high 3-4 hours or all day on low.

    Remove chicken and debone. Measure liquid. Add water, if necessary, to equal 2-2 1/4 cups. Return chicken pieces to broth.

    Saute and add to broth:
    1-2 stalks celery, chopped
    1 large onion, chopped
    1 green pepper, chopped
    1 hot pepper, chopped
    2 cloves garlic, minced
    Stir in:
    1 small can tomato paste
    1 bay leaf
    dash thyme
    dash Tabasco
    Salt and pepper

    Cook on high 1 hour (or on stove about 20 minutes). Add:
    1 cup rice
    1 pound Andouille sausage or Polish kielbasa
    1 pound shrimp, peeled and deveined

    Cook 1-1 1/2 hrs. in crockpot or 30 minutes on stove top.
