    Easy Salmon for Two

    I've come to really like high-heat roasting. I've used it often on beef, but never before on seafood. I tried this salmon and it is amazingly easy.

    List of Ingredients





    1 salmon fillet, about 3/4 pound
    Cooking oil or olive oil
    Salt and Pepper

    Preheat oven to 450 degrees. Place salmon fillet on a lightly oiled foil-lined baking pan. Spritz oil on top of fillet. Lightly salt and pepper fillet. Bake 10-14 minutes, depending upon thickness of fillet. Flesh should flake when lightly pricked with a fork.

    Serve with Sour Cream-Dill Sauce:
    1/2 cup light mayonnaise
    1/2 cup fat-free yogurt or light sour cream
    1 teaspoon Dijon mustard
    2 teaspoons onion, minced
    2 tablespoons cucumber, seeded and chopped very fine
    1/2-1 teaspoon dill weed
    1-2 teaspoons lemon juice, if desired

    Combine ingredients. Chill
