Leslie's Shrimp and Feta Pasta

Recipe Introduction
Leslie threw this together one evening and after our feeding frenzy, we made her write down what she'd done. This is incredibly easy and a good quick dinner. The sauce cooks in just about the time it takes for the pasta. On top of that, it's fancy enough to serve to guests.
List of Ingredients
Saute:
6 cloves garlic, minced
3-4 tablespoons fresh oregano, minced (or basil or thyme)
2 teaspoons olive oil
Add and saute about 6 minutes:
5 Roma tomatoes, chopped (or 1 can diced tomatoes)
1/3 cup dried tomatoes, softened and chopped
1 pound shrimp, peeled and deveined
2 tablespoons butter (optional)
1/2 cup white wine
Stir in: 3/4 cup feta cheese, cubed
Serve over pasta. I usually use linguine. Also good with chicken, scallops, fish, etc.
Recipe
My friend Maggie pointed out that deveining and butterflying shrimp extends the surface area of the shrimp flesh. Thus, this produces more shrimp flavor.
