    Friend's adaptation of my chicken curry recipe

    When we lived in Texas, we often shared dinners with Carol and Jerry H. They were newly married and she was a highly innovative cook. One night I made chicken curry. Soon afterwards, Carol came up with this recipe using shrimp. It's one of our treats.

    List of Ingredients




    About 1 1/2 hours before serving, sauté:
    4 onions, chopped
    4 stalks celery, chopped
    1 stick oleo

    Add:
    2 tablespoons curry powder
    1 1/2 teaspoons salt
    1/4 cup flour
    1 1/2 teaspoons sugar
    1/4 teaspoon ginger

    Stir well and then add:
    2 cups chicken broth
    2 cups milk or cream
    Add: 2 pounds shrimp, peeled

    Simmer 30 minutes. Add 2 tablespoons lemon juice. Simmer 5 more minutes. Serve over rice.

    One the side, serve small bowls of some of the following condiments. Encourage guests to sprinkle whatever they may like on top of the curry.

    Chopped banana
    Chopped mango
    Chopped peaches
    Chopped hard-boiled egg
    Pineapple tidbits
    Chopped toasted pecans
    Chopped salted peanuts
    Coconut
    Sliced pickled ginger
    Chutney
    Fried onion rings
    Jalapenos, pickled or fresh, chopped fairly fine
    Preserved ginger
    Chinese chili sauce
    Pepitas
    Halved grapes
