    Bobotie

    This is popular in South Africa and we first had it when we lived near Washington, D.C. Some South African friends of Dick's sister served it to us with the warning that we'd need a lot of bread to counteract the chiles. Ha! Even then it was mild fare.


    List of Ingredients


    • 1 slice bread
    • 1 cup milk
    • 2 pounds ground beef
    • 1 1/2 cups onion, finely chopped
    • 1-2 jalapenos, minced (opt.)
    • 1 tablespoon brown sugar
    • 1 teaspoon salt
    • 2 tablespoons hot curry powder
    • 1/2 teaspoon pepper
    • 1/4 cup fresh lemon juice
    • 1 apple, peeled and grated
    • 1 egg
    • 1/2 cup raisins
    • 1/4 cup blanched almonds, chopped
    • 2 more eggs


    Instructions


    1. Soak bread in the milk for about 10 minutes. Squeeze the bread nearly dry and reserve.
    2. Brown ground beef, onion, and jalapenos in a little oil. Stir in the curry powder, sugar, salt and pepper and cook about 2 minutes.
    3. Add the lemon juice. Bring to a boil and simmer about 15 minutes. Remove from heat.
    4. Add the bread, apple, 1 egg, raisins, and almonds. Mix well and turn into a 3-quart baking dish.

    5. Beat remaining two eggs with reserved milk until frothy. Pour evenly over the meat mixture.
    6. Bake at 300-325 abpit 30 minutes. Serve over rice.


    Final Comments


    This is similar to pastitsio and moussaka. I find it interesting that so many cuisines employ common techniques.
