    Stuffed Peppers

    As I kid I wasn't overly fond of meatloaf, but I adored stuffed peppers. Mom used to cook baked potatoes (with sour cream, of course), baked acorn squash (with lots of butter and brown sugar), baked tomatoes and stuffed peppers. Her cucumber-tomato salad finished of a perfect summer dinner.


    One recipe My Basic Meatloaf
    6 red, green, or yellow bell peppers

    Cut tops off bell peppers. Cut a THIN slice off the bottoms so peppers will stand up in baking dish. Fill with meat mixture.

    Bake at 350 degrees about 1 hour.

    Occasionally I cut large bell peppers in half for filling. The flavor remains the same and the size accommodates most folks' capacities. Drizzle a little catsup on top for additional flavor.
