    Barbecued Pork

    I cooked this often when the kids were little. It was one of the few sandwich suppers Dick liked--he never felt that sandwiches were proper dinner fare. He's become more amenable since he retired--about sandwiches at least. He still has some hang-ups about meatless meals, but we're working on it.


    List of Ingredients


    • 1 large fresh pork shoulder roast
    • 1/2 cup minced onion
    • 1 cup catsup
    • 1/2 cup water or dry wine
    • 2 tablespoons vinegar
    • 2 tablespoons lemon juice
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons dry mustard
    • Salt and pepper to taste
    • 2-4 tablespoons brown sugar
    • Hamburger or large sub rolls


    Instructions


    1. Brown roast on all sides in Dutch oven. Add about 1/2 cup water and simmer 3-4 hours until meat falls from bone. Remove from pot and shred meat. Return to pot and add remaining ingredients.
    2. Simmer 45 minutes or a bit longer for flavors to blend.
    3. Serve on toasted rolls.



    Final Comments


    This sauce is also good on grilled ribs. Pre-cook the ribs by boiling or baking. Grill just until cooked. Brush sauce on ribs once or twice during grilling.

    This is also good with ground beef or poultry.

    Alternate version: Use commercial BBQ sauce mixed with an equal part red wine.
