    Mrs. D's Ham Rolls

    Mrs. D. was the personification of Olde South. She and her husband had a hardware store that just happened to sell fabric and sewing supplies. Shortly after I moved here, I went there looking for iron-on interfacing. She promptly informed me that she didn't carry it and wouldn't consider it. I guess she could tell from my accent that I hadn't been born within 500 miles--just another brash Yankee who'd invaded her land. Coolly polite, we maintained an aloof relationship for several years.

    Her next door neighbor was one of my best friends. Mrs. D. eventually decided that I was OK. If Suzanne liked me, I must have some redeeming features. Eventually, Suzanne moved away. Mrs. D. began sharing her figs and we became quite good friends. Once when Mom came for a visit, we took Mrs. D. to lunch. She returned the gesture by serving us this on another day. I think of her every time I make it.

    It's funny how memories of special people are played back whenever we cook a recipe they've shared--there have been many.....


    List of Ingredients


    • 2 slices 1/2" thick ham, about 2 pounds
    • 30 whole cloves
    • 1 can sliced pineapple, juice reserved
    • parsley
    • 4 cups soft bread crumbs
    • 1/2 cup raisins
    • 1/4 cup brown sugar
    • 1 teaspoon dry mustard
    • pinch salt
    • 1/4 cup butter, melted


    Instructions


    1. Mix together bread crumbs, raisins, brown sugar, mustard, salt. Drizzle melted butter and then gently mix in.

    2. Place a slice of ham on the bottom of an oil-sprayed baking dish. Spread the bread crumb dressing on top.
    3. Stud the fat of the second slice of ham with the cloves. Place on top of dressing. Top with the pineapple slices.
    4. Pour reserved pineapple juice over all and sprinkle with parsley.
    5. Bake at 325 degrees about 30 minutes. Cut into serving pieces with a pineapple slice per serving.


    Final Comments


    Lovely served with steamed asparagus and mixed fruit.

    My Version:
    Use thin-sliced ham*. Spoon dressing on each slice and roll up. Secure with toothpicks. Place seam side down in baking dish. Top with pineapple chunks and a little juice. Sprinkle with a tablespoon whole cloves. Top with a little parsley and then drizzle pineapple juice over all. Bake as above.

    *I have the butcher slice boneless ham or buy sliced boiled ham.
