Ribs and Kraut

Another version of our favorite dish.
Western-style spareribs, cut by butcher into 2-rib sections
2 large cans sauerkrautRecipe
Brown ribs in a little oil. Place along with sauerkraut in a large kettle. Add a little water. Simmer 2-3 hours.
Alternatively, this may be roasted at 350 degrees about three hours. Browning the ribs beforehand adds depth to this recipe even when roasted.
This may also be done in a browning bag. Prepare the bag according to manufacturer's directions. Place sauerkraut on the bottom and the ribs on top to prevent the kraut from burning against the top of the bag. Roast as above. I turn the temperature down to between 300 and 325 degrees.
Notes: Sauerkraut and pork is one of our New Year's Day traditions. The other is good ol' southern black-eyed peas and cornbread. Over the years we've alternated one or the other from year to year. Now since we're so fond of both, we have one during the week before and the other on January 1. Saves a lot of discussion.
