    Black Bean Relish

    Almost fat-free. This works well as a salad, too. The Chinese chili sauce is what makes this relish different. There are similar recipes around, but this has more character.


    List of Ingredients


    • 1 can black beans, drained and rinsed (if desired)
    • 1 can shoe peg corn
    • 1 serrano and jalapeno, minced
    • 1 can diced tomatoes or two large fresh tomatoes, chopped
    • 1 red or green bell pepper, chopped
    • 1 onion, chopped
    • 1/4 cup white wine vinegar
    • 1 tablespoon oil (opt.)
    • 1/2 teaspoon salt
    • 1 tablespoon Chinese chili sauce
    • Tortilla chips


    Instructions


    1. Combine ingredients. Chill well. Serve with tortilla chips.


    Final Comments


    I often use Rotel tomatoes instead of plain canned ones. They do increase the heat, though.
