    Greens with Toasted Walnuts

    I'm not sure why I'm writing this recipe down. It changes nearly every time I make it--but then so do most other things I cook.


    List of Ingredients


    • 4 cups Romaine*
    • 1/2 cup walnuts, toasted**
    • 6 green onions, thinly sliced
    • 1 can mandarin oranges, drained***
    • Dressing:
    • 1/2 carton raspberry yogurt
    • 1/4 cup Italian dressing


    Instructions


    1. Assemble greens, nuts, onions, and fruit in a large bowl.
    2. Combine the yogurt and salad dressing. Toss with greens mixture. Serve immediately.
    3. To toast nuts: Heat a skillet to medium-high. Add nuts. Stir constantly until toasted.

      Bake in oven at 350 for about 10-15 minutes. [Actually, you can toast in the oven at almost any temperature as long as you keep a close watch on temperatures around 400 degrees. Nuts burn quickly at such a high heat.]

      Note: No oil is added to either method.


    Final Comments


    *or spinach, or mesclun, or a mixture of lettuces
    **or pinenuts, or pistachios, or hazelnuts, or pecans, or peanuts or. . .toasted seeds such as sunflower or sesame
    ***or strawberries or mangos or pineapple chunks

    The idea is versatility--use whatever is on hand. Even the dressing changes. Lemon yogurt is nice and so is peach.
