    Mom's Congealed Cabbage Salad

    In the '40's and '50's, congealed salads were very popular. Mom often made this, especially during the summer when vegetables were fresh.


    List of Ingredients


    • 1 cup cabbage, finely shredded
    • 1 cup celery, sliced fine
    • 1/4 cup green pepper, chopped (or less, to taste)
    • 1 tablespoon onion, minced
    • 1 cup carrots, grated
    • Gelatin mixture:
    • 1 large package lime jello dissolved in 2 cups boiling water
    • 1 tablespoon vinegar
    • 1 teaspoon sugar
    • Dash salt


    Instructions


    1. Mix gelatin ingredients. Cool. Add shredded vegetables. Pour into 9 x 13" baking dish. Chill until set.


    Final Comments


    I don't often make this because Dick doesn't care for many congealed vegetable salads. For many years, though, Mom would make this especially for me when we'd return home. It was one of those childhood comfort foods.
