    Mom's Pepper Slaw

    Mom always made this in the summer, probably because that's when we could get good green peppers. It's on the vinegar-y side and has practically no calories.


    List of Ingredients


    • 1 head cabbage, finely shredded
    • 1 green bell pepper, chopped rather fine
    • 1-2 tablespoons onion, chopped
    • 1 carrot, finely shredded
    • Dressing:
    • 1/4 cup cider vinegar
    • 1-2 tablespoons sugar
    • Salt and pepper


    Instructions


    1. Combine vegetables. In a small bowl, combine ingredients for dressing. Pour over vegetables. Chill and serve.


    Final Comments


    This is a nice alternative to creamy slaws. The big bonus is that it's fat-free.
