    My Creamy Slaw

    List of Ingredients


    • 1/2 head cabbage, finely shredded
    • 1 carrot, grated
    • 2-3 tablespoons grated onion
    • 1/2 cup celery, finely chopped (opt.)
    • 2-3 tablespoons pickle relish
    • Dressing:
    • 1/2 cup yogurt
    • 1/2 cup low-fat mayonnaise
    • Pinch salt
    • 1-2 tablespoons lemon juice
    • Buttermilk to thin to desired consistency
    • 2 teaspoons sugar
    • A little pickle juice, to taste


    Instructions


    1. Combine shredded vegetables in large bowl. In a separate bowl, mix dressing ingredients together. Combine dressing with vegetables. Chill.


    Final Comments


    It has taken years to find this dressing combination.

    The vegetables should be shredded with a salad maker or in the food processor. Fine shredding will make the salad juicier. While that's not desirable in some slaws, it's necessary in this recipe.
