    Nita's Wilted Onions

    Nita is Byron's mother so I guess that makes us kinfolk--at least we share a few grandchildren. When our first was born, and we were all busy oohing and aahing over the wonder of it all, Nita made this salad. She'd admired one like it at Cerami's, a now defunct Italian restaurant in the area. It was perfect with the heavier holiday foods that fall.


    List of Ingredients


    • 1 1/2 pounds red onions (white do nicely, too)
    • 1/2 cup oil
    • 1/2 cup white vinegar
    • 1/2 cup water
    • 1/2 teaspoon pepper
    • 2 teaspoons salt
    • 1 tablespoon sugar
    • 2-3 drops Tabasco


    Instructions


    1. Thinly slice the onions and place in a large bowl.
    2. Bring the remaining ingredients to a boil. When hot, pour over the sliced onions. Let stand several hours. Serve cold or at room temperature.


    Final Comments


    This dish keeps about a week in the refrigerator--if it lasts that long.
