    Taco Salad

    From the mid-'70's. The first time we tried this salad, the recipe called for thousand island dressing. It's a wonder we ever made it again. That was totally unappealing.


    List of Ingredients


    • 1 pound groundmeat
    • 1 onion, chopped
    • 2 tablespoons chili powder, or to taste
    • 1 clove garlic, minced
    • pinch cumin
    • 1 head Romaine, shredded
    • 1/2 pound sharp or Monterey Jack cheese
    • 1 onion, chopped
    • 2-3 tomatoes, chopped
    • 1/2 cup black olives, sliced
    • Sprigs of cilantro
    • 1 can refried beans, heated, or 1 can kidney beans, drained and rinsed
    • A few green chiles, chopped, or 1 can chopped green chiles
    • Salsa
    • Sour cream
    • Pico de gallo
    • Tortilla chips


    Instructions


    1. Brown groundmeat, onion, chili powder, garlic and cumin. Set aside.
    2. Place remaining ingredients in separate bowls so that guests may create their own salads.


    Final Comments


    Spicy chicken works well, too. The simple method is to stir-fry chicken breast pieces with a package of fajita seasoning. Ground venison is as good as ground beef.
