    Tossed Chicken Salad

    This is a knock-out salad, great for bridge luncheons.


    List of Ingredients


    • 1 head Romaine or 1 bag spinach
    • 1 pint raspberries, blueberries, or strawberries
    • 1/2 cup sliced almonds, lightly toasted (or hazelnuts)
    • 2 cups mozzarella, grated or Monterey Jack cheese
    • 2 cups chicken, diced
    • 1 cup mushrooms, sliced
    • 1/2 cup bacon crumbles
    • 1/2 cup radishes, sliced
    • Home-made croutons for garnish
    • Dressing:
    • 1/3 cup raspberry vinegar or rice wine vinegar
    • 1/2 cup sugar
    • 1 teaspoon dry mustard
    • Salt to taste
    • 1 tablespoon minced onion
    • 1/2 cup canola oil
    • 1 teaspoon poppy seeds
    • 1 teaspoon walnut oil


    Instructions


    1. Combine salad ingredients (Romaine through croutons).

    2. Combine dressing ingredients except oils. Mix well. Drizzle in oil while beating steadily. Add walnut oil last.


    Final Comments


    Try ham or shrimp instead of chicken.
