    Wilted Lettuce

    Mom always made this in the spring when we had fresh lettuce, especially black-seeded Simpson, in the garden.


    List of Ingredients


    • About 8 cups garden lettuce, young spinach, or endive
    • 1 bunch green onions, thinly sliced
    • 4-6 strips bacon, fried, drained and crumbled
    • 2-3 hard-cooked eggs, chopped
    • Dressing:
    • 2-3 tablespoons hot bacon fat
    • 1/4 cup vinegar
    • 2 tablespoons sugar
    • pinch salt


    Instructions


    1. Combine lettuce, onions, and bacon in a large serving bowl.

    2. In a small, but deep saucepan, heat fat. Carefully add vinegar, sugar and salt. Pour immediately over salad.
    3. Sprinkle chopped eggs on top.


    Final Comments


    Be careful adding vinegar to bacon fat. The mixture tends to bubble vigorously. Add immediately to salad. Quickly toss so that the hot dressing penetrates the entire salad.
