    Avogolemono Soup

    List of Ingredients

    This is so easy, it's sinful. Patsy and I could eat it by the quart.

    2 quarts (or 1 large can and 1 regular can) chicken broth
    1/2 cup orzo
    4 eggs
    juice of two lemons

    Bring broth to a boil. Add orzo. Cook about 15 minutes.

    Remove pot from heat. Beat eggs until light and frothy. Slowly beat in lemon juice. Dilute with about 2 cups broth, beating constantly until well-mixed.

    Add to rest of soup, beating constantly. Heat but do not boil. Serve immediately.
