Bean and Tomato Soup

This is typical of my cooking. I start with a broth and the soup grows and grows. In this instance, though, we liked the outcome so much that I decided to add it to the files.
In a large pot, saut� in a little oil:
2 large onions, chopped
1 large pepper, chopped
2-3 large ribs celery, chopped
1 pound ground turkey (opt.)
2-3 cloves garlic, minced
Add and simmer 2 hours:
1 quart chicken stock
lots of tomatoes (at least 2 quarts canned)
2 slices ham @ 1/2" thick, cubed
2-3 dried chiles (opt.)
Simmer about 2 hours on medium to reduce tomato liquid.
Add and cook about 1/2 hour:
3 cups cooked chicken
1/2 cups fresh parsley
1/2 pound Polish kielbasa, heated in the microwave on HIGH for about 6 minutes, grease drained, and sliced thin.
Add: 4 cans great northern beans or combination of other beans
Simmer another 30 minutes. Add 1 package frozen corn. Heat through.

This soup is also known as Clean the Freezer Stew. That's how it originated.
