    Chicken and Creamy Cabbage Soup

    List of Ingredients

    On a trip to New Orleans, we had dinner at a restaurant near the French Market. Mom ordered their cabbage soup special-of-the-day. She loved it. When we came home, we experimented until we developed this simple version that is almost identical to the original.

    1 1/2 quarts chicken broth
    1-2 cups diced cooked chicken
    1 onion, finely chopped
    4-5 potatoes, diced
    2-3 carrots, chopped
    1 head cabbage, chopped into fairly large chunks
    3 cups milk or cream (they used cream; I use milk)

    Recipe

    Bring broth to a boil. Add chicken, onion, potatoes, and carrots. Cook about 1/2 hour and then add the chopped cabbage. Simmer 20-25 minutes more. Stir in milk or cream. Adjust seasonings and heat--do not boil.

    Note: If soup appears too thin, thicken 1 cup of the milk with 2 tablespoons flour. Stir into simmering broth. Let cook a few minutes. Then add remaining milk.
