    Cream of Fresh Pea Soup

    List of Ingredients

    Another invention from cleaning a freezer.

    2 20-ounce packages frozen fancy mixed vegetables (cauliflower, broccoli, zucchini, etc.)
    2 packages frozen English peas
    1-2 carrots
    a little onion
    2 regular cans chicken broth (or homemade)
    1 can skimmed evaporated milk



    Recipe


    Cook all vegetables in chicken broth until soft. Puree with hand-held blender. Return to heat and slowly add evaporated milk. Heat, but do not boil.

    We like just the flavors of the vegetables, but additional herbs could easily be added.
