    Curried Cream of Vegetable Soup

    List of Ingredients

    A little milk, a little curry, and the hand-held blender. That's all we need to make a creamed soup out of almost anything!

    Cook until tender:
    6 cups mixed vegetables
    6 cups chicken broth
    Add:
    3 tablespoons curry powder, or to taste
    1 can skimmed evaporated milk
    2 cups skimmed milk
    1 can green chiles, chopped
    2 tablespoons cornstarch (or as needed to thicken) dissolved in a little milk or broth)
    additional broth to bring to desired consistency

    Recipe

    If desired, puree vegetables and broth before adding remaining ingredients.

    Simmer without boiling until hot. Serve immediately.
