    Healthy Lentil Soup

    List of Ingredients

    My invention after reading several recipes.

    Cook 1 cup pre-soaked great northern or cannelloni beans until soft. Set aside.

    Cook until soft:
    1 pound lentils (about 2 c. mixed varieties are best)
    3 cups chicken broth
    2 carrots, diced fine
    2 potatoes, diced

    Meanwhile, "sweat"
    1 teaspoon olive oil
    3 cups onions, chopped
    1 cups leeks, chopped
    5 cloves garlic, minced

    Add:
    2 teaspoon ground cumin
    1 teaspoon ground cardamom
    1/2 teaspoon cayenne
    2 bay leaves
    1/2 teaspoon pepper

    Add sautéed mixture to lentil mixture. Add:
    3/4 cup fresh parsley, chopped
    1/2 teaspoon salt, or to taste

    Cool slightly. Puree in batches with hand-held blender or food processor. Add:
    juice of 1 lemon (or more)
    broth to thin to desired consistency
    cooked white beans

    Heat through.

    Recipe

    This may be served over cooked brown rice, couscous, or whole wheat berries.
